Appassimento Experience
Appassimento is one of the fundamental processes for producing the great classic wines of Valpolicella. It is the ancient and artisanal technique that consists of leaving the best grapes to rest in crates before pressing.
In the following months, the grapes dehydrate, and the sugars, aromas, and polyphenols that will later characterize the renowned Amarone concentrate within them.
After the tour of the vineyard and the villa, this experience will allow you to taste the wines produced by Palazzo Montanari using this ancient production technique: Ripasso Classico, Amarone Classico, Amarone Classico Riserva and Recioto Classico.
The wine tasting is accompanied by breadsticks and/or bread with oil, appetizers of typical cheeses, and sbrisolona or dry pastries with Recioto.
